Cauliflower Alfredo Sauce

Healthy Pasta?! What, is that even possible?! Well it is now with this delicious and nutritious Cauli Alfredo sauce made just for you... 

1 head cauliflower
2 garlic cloves
1/2 cup milk
Olive oil

Heat up pan at medium/high heat and add olive oil.  Cut cauliflower into small pieces and add to pan with salt/pepper, cook for about 5-min lightly browning (continually stirring). Add water to pan almost covering all cauliflower and boil until soft (no lid). Once most of the water has evaporated, turn heat down to low, add the garlic, milk and cook for 2-min. Remove from heat and add to blender. Blend for a few minutes until smooth, add milk or olive oil if needed. Voila!! Pour over your pasta and enjoy!!! 

Serve this healthy Alfredo sauce with some whole wheat pasta, chicken, portobello mushrooms, bell pepper, and top with fresh basil and Parmesan cheese!
