Spicy Loca Chile Burgers

2 lbs ground beef
1 bunch Cilantro
1/2 Onion
1 Jalapeño
2 Green onion
3 cloves Garlic
1 cup chile paste

🔶 Chile paste 🔶 (recipe below)

3 Ancho chili, dried
4 chili de Arbol, dried
5 Guajillo chili, dried
5 cloves garlic
1 tbsp cumin seed
2 cups boiling water

Cut open guajillo and ancho chiles along side and remove seeds. Open chiles and place flat in a pan on medium heat. Cook for about 4 min, turning once, until lightly puffed and toasted.  Add chiles de árbol and cumin seeds; toast until fragrant, about 1 minute. Transfer to bowl, add 2 cups boiling water, and let soak until softened, about 10 minutes. Purée chile mixture with some of the liquid and garlic in a blender until nice smooth paste.

Sooooo once you have the chili paste add all the ingredients above to your ground beef and marinate for at least 4 hours. Then grill up your patties for a spicy little fiesta in your mouth!! I added tomato, jalapeño, arugula, ricotta and onion with a whole wheat bun!
